I want headphones that block outside noise really well. I can't play the drums super loud, due to my ears already being shot. As a result, I can hear myself hitting the pads, making it harder to hear the actual drums sounds coming through the headphones. I even have decent over ear headphones. Any brands/models you suggest?

You haven't provided a budget so this will not be easy to recommend.

A good way to block outside noise to get professional moulds made of your ears and use in ear "monitors" (IEMs in the vernacular). A perfect fit will help greatly with sound leakage.

IEMs without custom moulds are still good as long as they fit you well, so chose the best fitting tips.

Makes of IEM to consider - as many as there are drummers. The standard gigging stuff would be Shure SE215, and up.

More budget - MEE Pro M6 Pro2 or KZ ZS-10 Pro

With IEMS you can always combine with ear defenders on top to cut out extra sound if necessary - see Vic Firth

For headphones - again no budget provided - so I'll just say I've been using Sennheiser HD205 cans for many many years in many live environments on DTX drums with different bands. Have a few pairs (not sure if they are still available)

I think pretty much any in-ear monitor will block out almost all noise of the pads being hit. Like David suggested, the Shure SE-215 is tried and true. Zildjian also recently released their own in-ear monitors, maybe something you can check out, though I would probably just go with the Shure - https://zildjian.com/professional-in-ear-monitors.html
